Pilaf with anchovy

Today I want to show you a fish dish which my mother-in-law cooked for us when we were in Turkey. It is called "Hamsili Pilav" (Pilaf with European anchovy). Hamsi (Eurpoean anchovy) is a small fish which is caught on the coasts of Black Sea. This dish is traditional to the Turkey's Black Sea region. The pilaf is made with rice, onions, pinenuts, dried currants, allspice, cinnamon, black pepper, salt and olive oil. First the bones and heads of the fish are removed and the pilaf is cooked. In a baking dish, fillets of Hamsi are arranged as one layer. Then the cooked pilaf is put on top of these. After another layer of Hamsi, it is baked in the oven until the fish is done.
